Over the past week and a half, I have played through* all five Jak games. There were ups, downs and side-to-sides.
Oh and Daxter can go in here, too, but I haven't played it for years, so the review might be off a bit.

ALL* GAMES HAVE IN COMMON:
Every character you're supposed to like, you do. Besides Ashelin, she's a bitch. Every character you're supposed to hate, you do. The story's gripping and you want to save the world.
Also, all the guns are based on the different colours of eco, red, yellow, blue and dark/purple (green in Lost Frontier)

JAK AND DAXTER: THE PRECURSOR LEGACY
started: 2011/8/20
finished: 2011/8/21
Bright, cheery, frustrating at times, the first Jak was unlike any that came after it. It feels like the next step for Naughty Dog after Crash. Jak jumps and spins and runs away from shit just like Crash. Notably, only two Jak games mention red eco, blue eco and yellow eco. This is one of them.
most frustrating part: The MOTHERFUCKING Precursor Basin, a level entirely set on the ZOOMER with precision high-speed driving
most fun part: The final level/boss
overall rating: 9.7/10

JAK II
started: 2011/8/21
finished: 2011/8/22
Grim, dark, frustrating always, the second Jak was a big shift from the first. A huge city to explore, guns, guns and guns. Jak jumps and shoots and dies in a hail of bullets like... well... someone who isn't Crash. This game is the hardest* of the series. It hates you with a passion.

JAK 3

Less grim, less dark, less frustrating, the third Jak gets it all right. A huge city, a small town and a fuckhuge desert to explore and MORE GUNS THAN YOU CAN SHAKE A PHEASANT AT. Jak jumps, shoots and drives all over the goddamn map. He doesn't give a fuck, he's JAK. Also features the first single-tear moment of the franchise.
most frustrating part: TURRET MISSION
most fun part: When you get every gun fully upgraded and can rape ANYTHING

JAK X: COMBAT RACING

stopped playing due to BULLSHIT: 2011/8/28
Don't get me wrong, Jak X is a fun racing game and car combat game. However, one mode in it is completely un-fun. Road rage is boring, tedious and just awful. You can skip most of it until the final cup, where the game gives you THREE road rages with IMPOSSIBLE goals. Fuck you, Naughty Dog. Fuck you. Also, SAVE GLITCH can get rid of all your progress without a moment's notice. Freezing on the save screen, VERY nice.
most frustrating part: Road rage
most fun part: Deathmatches and artefact races
overall rating: 7.9/10

DAXTER

finished: 2006 oh yeah
For a spinoff, Daxter is really good. It fills in the story of what Daxter did in the two years between when they got to Haven City and when they rescued Jak. The platforming's good and exterminating metalhead bugs feels worthwhile. The game isn't really hard, besides getting gold medals in the movie parody dream sequences.
most frustrating part: Final boss
most fun part: Daxter's dreams

JAK AND DAXTER: THE LOST FRONTIER

This game is different. Being for PSP (or a PS2 port of a PSP game), it gets rid of some things, like the ability to roll. The Peacemaker(!) is axed in favour of the "Lobber". It makes sense, as the Lobber is the green gun, rather than the purple. The game is generally fun. The on-foot and in-plane parts work very well and never seem unfair. The Dark Daxter parts, however, are bad. They aren't unplayable or anything, but they break up the action and aren't very fun. The game also has a few glitches, such as important enemies spawning inside cliffs or not wanting to load the final stage of the final boss fight the first time. Also, Jak's voice actor is different and he doesn't have a goatee, though you can buy him a BADASS beard. Also the dark eco is a really BRIGHT purple for some reason. OH, and another single tear moment here.
most frustrating part: Blocking yourself out of an area you need to be in in a Dark Daxter mission
most fun part: automatic replay with infinite ammo and health plus even better weapons and armour
overall rating: 8.7/10
